In an effort to be healthier, I am trying to eat more salads. But salad dressing can be a huge addition of calories, not to mention unwanted filler ingredients (for me, often soy and/or dairy, which I'm allergic to).
So while discussing our mutual love of hummus with my mom, I devised a recipe for homemade salad dressing. Sure, you could make oil and vinegar or oil and balsamic, but why not....sesame?
- 1 clove roasted garlic
- 1/4 tsp salt
- 2 Tblsp + 1/2 tsp tahini
- 1 tsp lime juice
- 4 tsps rice vinegar
- 2 Tblsp water
- 1 Tblsp toasted sesame seeds (optional)
- Combine all ingredients in a container.
- Whisk well until mixture is the consistency you prefer (I like mine a little thick, like a ranch dressing would be).
- Refrigerate until ready to use.
Voila! Instant delicious salad dressing. I wonder what else it would go well on...hrmm....
