We all want to eat more healthy, spend less money, and still enjoy our experience of food. And for as much as I see "eat this, not that" stuff out there, key gaps are occurring in the "tasty, healthy, AND cheap" department. So I'm rectifying that right here, right now*.
- Inexpensive (especially the less popular squash like acorn, kabocha, turban, and delicata)
- Healthier for you (they're high in vitamin A, C, potassium, fiber, manganese, folate, omega 3, vitamin B, copper, iron, and beta carotene)
- Versatile (they can be smashed with butter, roasted, fried, you name it!)
- Easy to grow your own (or buy local)
