If you're like me, and all civilized human beings, you like peanut butter.
And so when Influenster sent me a coupon to try an Earth Balance product, I immediately went for their Crunchy Coconut & Peanut Spread.
And OH. MY. GODS.
The deliciousness. The crunchy, tasty, preservative and sugar-free peanuts. And the smooth, aromatic coconut oil.
It isn't sugary at all, but the aromatic aspect of it somehow sweetens the peanut butter in an amazing way.
Fedora and I initially just took spoonfuls of this mana from heaven. But then I got the brilliant idea to make a Thai-inspired pasta out of it.
The recipe is super simple.
Earth Balance Naturals Coconut & Peanut Spread
Thai chili spice (or berber and cayenne)
Dollop cream cheese (or sour cream, if preferred)
Your choice veggies
Your choice pasta (we refer rice pasta)
In a pan over medium-high heat, combine Coconut & Peanut Spread, thai chili spice, a dash of salt, and dollop of cream cheese; let warm until liquid; mix well.
In this sauce, sauté sliced mushrooms, chopped peppers, and chopped frozen kale (or your choice of veg).
Cook noodles according to the directions, drain, and toss with this sauce.
The peanut butter unites the variety of flavors and adds some filling protein. The spices balance with the cream cheese. And the leftovers work equally well hot or cold.
